Pandan Muffins
Ingredients:
- 250 g self-raising flour
- 150 g sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 egg
- 200 ml milk
- 110 g butter, melted
- 1 tsp vanilla essence
- Orange peel, grinded
- 1/2 tsp pandan mix
Method:
- Preheat the oven to 190°C, 375°F or gas mark 5.
- Sift the self-raising flour, sugar, baking powder and the salt into a bowl and mix them together well. Add a bit more of self-raising flour if the mixture us runny, add till you think that is thick enough, don't make it too thick.
- Take a separate bowl and pour in the milk. Add the melted butter, grinded orange(optional), vanilla essence and then break in the egg. Stir together thoroughly.
- Pour the wet ingredients into the flour mixture and briefly stir them together. Don't over mix it as you want to keep the batter fluffy.
- Add the pandan mix and fold. Don'y overfold again as the air out.
- Place the baking tray in the centre of the oven and bake for 15 to 20 minutes.
- Take them out and leave to cool for about 10 minutes.
