Pandan muffins



Pandan Muffins

Ingredients:
  • 250 g self-raising flour
  • 150 g sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 200 ml milk
  • 110 g butter, melted
  • 1 tsp vanilla essence
  • Orange peel, grinded
  • 1/2 tsp pandan mix
Method:
  1. Preheat the oven to 190°C, 375°F or gas mark 5.
  2. Sift the self-raising flour, sugar, baking powder and the salt into a bowl and mix them together well. Add a bit more of self-raising flour if the mixture us runny, add till you think that is thick enough, don't make it too thick.
  3. Take a separate bowl and pour in the milk. Add the melted butter, grinded orange(optional), vanilla essence and then break in the egg. Stir together thoroughly.
  4. Pour the wet ingredients into the flour mixture and briefly stir them together. Don't over mix it as you want to keep the batter fluffy.
  5. Add the pandan mix and fold. Don'y overfold again as the air out.
  6. Place the baking tray in the centre of the oven and bake for 15 to 20 minutes.
  7. Take them out and leave to cool for about 10 minutes.

Banana Muffins

Ingredients:
  • 250g self-raising flour
  • 200g sugar
  • 1tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 200ml milk
  • 110g butter, melted
  • 1 tsp vanilla essence
  • 2-3 bananas, mashed
  • orange peel, grinded (optional)
Method:
  1. Preheat the oven to 190°C 375°F or gas mark 5.
  2. Sift the self-raising flour,sugar, baking powder and salt into a bowl and mix them together well. If the mixture is a bit runny, sift in a little bit more of the flour.
  3. Take a seperate bowl and pour in the milk. Add the melted butter, grinded orange peel(optional), vanilla essence and then break in the egg. Stir together thoroughly.
  4. Pour the wet ingredients into the flour mixture and briefly stir them together. Don't over mix it as you want to keep the batter fluffy.
  5. Add the mashed bananas into the ingredients.
  6. Arrange the cups on a baking tray and then add about three generous spoonfuls of the muffin mixture to each one. Don't fill them completely as they will rise.

  7. Place the baking tray in the centre of the oven and bake for 15 to 20 minutes or until the top of the muffin is crispy and the base is soft.
  8. Leave them to cool for about 5-10 minutes.
